Jessica knew that Bob was leaving L A soon, and she decided that this was the final chance for her to show off her legs and feet to him. she knows how important that is and how a final special goodbye would hold special meaning to Bob. This scene was so good and so strong that Bob used it as the conclusion to one of his all time favorite and most important films.
