I'm guessing you're working with a front-wheel-drive here. If so then could you consider placing something in the path of one of the front wheels such as fruit or whatever then have a camera fixed outside facing the wheel & item near the front of it (maybe another cam inside POV from the pedals toward chair ) then peel out on pavement?

*If two cameras then one inside & one outside for picture-in-picture sync.
