Ingredients:

1/3 cup melted coconut oil 1/2 cup maple syrup or honey 2 eggs 1 cup mashed bananas 1/4 cup choice of milk or water 1 teaspoon baking soda 1 teaspoon vanilla extract 1/2 teaspoon sea salt 1/2 teaspoon cinnamon 1 & 3/4 cups almond, wheat, or coconut flour 1/3 cup oatmeal 2-3 peeled and chopped apples 1/2 cup raisins

Instructions:

Preheat oven to 325 degrees Fahrenheit (or 163 degrees Celsius) Greece muffin tin Beat oil and syrup/honey together, add eggs, beat well mix in mashed bananas, add milk/water, followed by vanilla, apples, and raisins in a separate bowl, mix flour, oats, baking soda, and cinnamon add all ingredients into one bowl fill muffin tin 2/3 of the way full sprinkle a mixture of brown sugar, oatmeal, and cinnamon on top (optional) bake for 22-25 minutes makes about 12 muffins
